- 1. What is the truth about fresh meat?
a. The term "fresh" is misleading which in the meat industry means the meat is not aged. In the majority of cases the meat that you have eaten all your life and over the past millennium at least has been aged to some degree producing a tender and more flavorful product. This meat is no longer “fresh” but aged. In the meat industry it is exceedingly common for a product to be wet aged for weeks or even dry aged for weeks before it is inevitable consumed by the end customer.
- 2. Is there a difference in quality between Frozen and Never Frozen?
a. Never Frozen and Frozen have the same quality with proper handling. It has been shown over many years that if the consumer doesn’t know that it’s been frozen they can’t tell the difference through blind taste-testing.
b. It is a matter of convenience and preference on whether you want your product frozen or never frozen.
- 3. What should I do when my package arrives?
a. If the thought of finally eating one of our products with in 48hrs. is likely then just place those items in the refrigerator keeping it in its original un-opened packaging. However, if this is not the case then place the product in its original un-opened packaging into the freezer.
b. If your frozen order arrives partially thawed just place it back into the freezer in its un-opened packaging.
- 4. How long will it last in the freezer?
a. When frozen at a constant frozen temperature the product will last at least up to six months without any loss in quality. If for some strange reason the desire to consume the entire product with in even that time frame is lost studies have shown that no loss of quality for up to a year with proper handling is possible.
- 5. How do I thaw my meat?
a. Thaw our products on a plate or cooking pan in the refrigerator for up to 48hrs.
b. Do not remove packaging until ready to cook.
c. Never thaw at room temperature.
d. Juices might leak from the packaging due to shipment or handling. The product is fine as long has proper handling has occurred either by keeping it frozen and/or refrigerating it during thawing.
- 6. How will my products be packaged?
a. All products will arrive in a reusable insulated cooler with reusable frozen gel packs to maintain product quality
